Seared Ahi Tuna

Seared Ahi tuna - well done Ahi Tuna pieces Lemon Salt Pepper Cayenne Ginger - grated Olive oil Honey/suger Slice ahi tuna in a way that has 3 sides, and fairly small but not too small (medium size is okay). Wash the Tuna and dry with paper towel well. Add lemon juice to the tuna and apply liberally around the tuna. Grate in ginger and apply juice puree ginger to tuna. Add enough salt and liberally quote the tuna with a mixture of pepper and a hint of cayenne. Allow for Tuna to sit for few minutes. Add olive oil to the pan, heat on medium. Turn heat to medium-low. Add a hint of honey/sugar to oil. Sear tuna 4 minutes on both sides on medium-low heat. Garnish with light salt, pepper and lemon.
